Sugar Cookies Recipe

I am archiving this for future use. These will puff up if they are 1/4 inch thick or more.

Cookie Ingredients:

  • Butter: 1 ½ cups (3 sticks) (Full)  3/4 cup (1.5 sticks) (Half)
  • Sugar: 2 cups (Full 1 cup (Half)
  • Eggs: 4 (Full 2 (Half)
  • Vanilla Extract: 1 teaspoon (Full 1/2 teaspoon (Half)
  • All-Purpose Flour: 5 cups (Full 2 1/2 cups (Half)
  • Baking Soda: 2 teaspoons (Full 1 teaspoon (Half)
  • Salt (if not using unsalted butter): 1 teaspoon (Full 1/2 teaspoon (Half)

Directions:

Step 1: Make the Dough

  • In a large bowl, cream together butter and sugar until smooth.
  • Beat in eggs and vanilla.
  • Stir in flour, baking soda, and salt until well combined.
  • Cover the dough and chill for at least 1 hour or overnight.

Step 2: Prepare to Bake

  • Preheat oven to 400°F (200°C).
  • Roll out dough on a floured surface to 1/4 to 1/2 inch thickness.
  • Cut into shapes using your favorite cookie cutters.
  • Place cookies 1 inch apart on ungreased cookie sheets.

Step 3: Bake

  • Bake for 6 to 8 minutes in the preheated oven until edges are lightly golden.
  • Cool cookies completely on a wire rack.
